I could eat this for lunch as a hot salad but it's probably better suited to being categorised as a side dish. As you might have noticed I haven't categorised my recipes because well, pumpkin pie for breakfast and granola midnight snacks are a thing. Plus, as my boyfriend often reminds me "soup is not a meal". If you substitute the ghee for coconut oil this is also vegan as well as paleo. Enjoy!
300g of green beans
2 cloves of garlic
1 thumb of ginger
salt & pepper
1 tablespoon toasted sesame
1 tablespoon of ghee
Place sesame seeds in a pan on low heats and stir occasionally for 3 - 5 minutes until toasted.
Cut the ends of the beans and steam them for 5 minutes or until soft but still firm.
While the beans are steaming, chop onion and mince the garlic and ginger. Add a tablespoon of ghee to a pan and fry on medium heat until the onions are translucent and the garlic and ginger very slightly browned.
Add salt & pepper to taste. Then add the steamed beans and toss in pan to mix. Lastly, add the sesame seeds.
