I learned this recipe from Zeena the warrior princess. For those of you who have spent countless hours in my family kitchen in Dubai...you know what's up.
700ml of home made chicken stock or vegetable stock
1 fresh tomato
1 small pieces of ginger
3 cloves of garlic
1 small bunch coriander (for garnish)
1 tablespoon of ghee
1/2 teaspoon coriander powder
pinch of cumin powder
salt & pepper (to taste)
Finely mince garlic, onions and ginger and set aside. Chop carrots and tomato roughly and set aside.
Sauté garlic, onions and ginger in a tablespoon of ghee for 5 minutes until onions are translucent. Then add carrots, chopped tomato, salt, pepper, coriander powder, cumin powder and chicken stock.
Bring to boil and then allow to simmer for 5 - 10 minutes or when carrots have softened. Whilst the soup is simmering wash and pick coriander leaves off their stalks.
Lastly, add to a food processor and blend to a purée. Garnish with the fresh coriander leaves and some black pepper.
